A Closer Look at Our Simple Vegan Ingredients

The beauty of this No-Bake Vegan Chocolate Pie lies in its straightforward ingredient list, each item carefully chosen for its role in creating a truly exceptional dessert:

  • Full-Fat Coconut Cream: This is the star ingredient for achieving that incredible, rich creaminess without any dairy. The trick is to chill a can of full-fat coconut milk overnight in the refrigerator. The thick, white, creamy part will separate and rise to the top, leaving the liquid part at the bottom. Scoop out only the thick cream – that’s your secret weapon for a truly luscious filling. (Save the leftover liquid for smoothies or coconut chia pudding!)
  • Creamy Almond Butter: Almond butter adds a wonderful depth of flavor, a subtle nutty undertone, and extra richness to the filling. It also helps with the pie’s overall texture and stability. If you prefer, or have a nut allergy, feel free to swap this with creamy cashew butter for a similar result, or even peanut butter for a chocolate-peanut butter twist.
  • Sweetener (Cane Sugar): A touch of cane sugar balances the richness of the chocolate and coconut cream, adding just the right amount of sweetness. You can adjust the quantity slightly to suit your preference, or experiment with other granulated sweeteners if desired.
  • Plant-Based Milk of Choice: Any type of unsweetened plant milk you love will work perfectly here – almond milk, soy milk, or oat milk are all excellent options. It helps to achieve the ideal consistency for blending and contributes to the overall creaminess.
  • Cornstarch: Essential for thickening the pie filling and ensuring it sets beautifully in the refrigerator. Cornstarch helps create that firm, sliceable texture we all love in a pie. If you prefer an alternative, arrowroot powder can be used as a direct substitute.
  • Quality Chocolate Chips: Since chocolate is the dominant flavor in this pie, choose a brand and type of chocolate you truly adore. Dairy-free chocolate chips come in various options, from “milk” chocolate style to semi-sweet or dark chocolate. The better the quality of your chocolate, the more exquisite your pie will taste.
  • Coconut Oil: Just a small amount of coconut oil is melted with the chocolate chips. This helps the chocolate melt smoothly and contributes to the pie’s glossy finish and its ability to set firmly when chilled.
  • Prepared Pie Crust: To make this dessert as easy as possible, we recommend using a store-bought graham cracker crust. These are readily available and provide a perfect, crunchy base. However, if you’re feeling ambitious or need a specific type of crust (like gluten-free or nut-based), homemade options are also fantastic.

Crafting Your No-Bake Vegan Chocolate Pie: Step-by-Step Guide

Creating this decadent No-Bake Vegan Chocolate Pie is surprisingly simple. Follow these steps for a smooth process and a perfectly set dessert:

Step 1: Prepare the Luxurious Chocolate Filling

Begin by melting the dairy-free chocolate chips and coconut oil together. Do this gently in a small saucepan over very low heat, stirring frequently. The goal is a smooth, glossy melted chocolate, not burnt or grainy. Once melted, remove from heat. In a high-speed blender, combine the thick coconut cream (scooped from your chilled can), cane sugar, almond butter, plant-based milk, and cornstarch. Pour the melted chocolate mixture into the blender with the other ingredients. Blend everything until the mixture is completely smooth and silken. You might need to pause and scrape down the sides of the blender once or twice to ensure everything is fully incorporated and lump-free.

Step 2: Assemble Your Masterpiece

Carefully pour the creamy chocolate filling into your prepared pie crust. Use a spatula to gently spread and smooth the top, ensuring an even layer. For an extra touch of visual appeal and chocolatey goodness, sprinkle some additional chopped dairy-free chocolate or chocolate shavings over the top of the pie. Once assembled, place the pie in the refrigerator to chill. This step is crucial for the pie to set properly and achieve its firm, sliceable texture. It needs a minimum of 4 hours, but for the best results, we recommend chilling it overnight.

Step 3: Serve and Savor Every Bite

When you’re ready to serve, take the pie out of the refrigerator at least 10-15 minutes before slicing. This slight warming will make it easier to cut into neat, clean slices. Serve each rich slice as is, or elevate the experience with your favorite toppings. A dollop of creamy coconut whip, a sprinkle of flaky sea salt to enhance the chocolate flavor, fresh raspberries, or a scoop of vegan vanilla ice cream are all fantastic additions. Enjoy every smooth, chocolatey bite!

Expert Tips & Troubleshooting for the Perfect No-Bake Pie

  • Don’t Panic About the Filling Consistency: When you first finish blending, the filling will appear quite liquidy, almost like a thick milkshake. Do not worry! This is completely normal. The magic happens during the chilling process. It will firm up beautifully in the refrigerator, transforming into that desired sliceable texture.
  • Choosing Your Perfect Crust: While a store-bought graham cracker crust offers ultimate convenience, you have many options. Any cheesecake-style crust will work wonderfully. Consider making a homemade graham cracker crust, or get adventurous with a walnut cashew crust for a richer, nutty base. An Oreo cookie crust (ensure vegan-friendly Oreos) also makes for an incredibly decadent base. For gluten-free needs, simply use gluten-free graham crackers or a nut-based crust.
  • Crucial Chilling Time: This pie absolutely needs at least 4 hours to set properly in the refrigerator. Resist the urge to cut into it early, or you’ll end up with a delicious but messy puddle. For the absolute best results and a perfectly firm, easy-to-slice pie, we highly recommend leaving it to chill overnight. Once set, it can be kept in the refrigerator for up to 4 days, making it an excellent make-ahead dessert.
  • Elevate Your Serving: Beyond the basic slice, consider enhancing the experience. Serve each slice with a generous scoop of vegan vanilla ice cream, a handful of fresh raspberries for a burst of tartness, or a swirl of vegan whipped cream. A dusting of cocoa powder, some chocolate shavings, or even a drizzle of vegan caramel sauce can take this pie from delicious to extraordinary.
  • Temperature for Slicing: As mentioned in the instructions, taking the pie out of the fridge about 10-15 minutes before serving allows it to soften just slightly. This makes slicing much easier and cleaner, preventing the crust from crumbling and the filling from sticking to your knife.
  • Flavor Variations: Feel free to experiment with the flavor profile! A tiny pinch of espresso powder in the filling can deepen the chocolate flavor without making it taste like coffee. A few drops of peppermint extract can turn it into a refreshing mint chocolate pie, or a hint of orange zest can add a citrusy brightness.

Does it taste like coconut?

A common concern with coconut cream in vegan desserts is a strong coconut flavor. However, in this No-Bake Chocolate Pie, the rich and intense chocolate is the true star. While coconut cream and a touch of coconut oil are vital for creating the incredibly smooth, creamy, and light texture, their flavor is largely masked by the chocolate. The coconut is there to provide body and creaminess, ensuring the pie feels indulgent without being overly heavy, rather than imparting a distinct coconut taste.

Do I need any special equipment?

No need for fancy culinary gadgets here! You won’t require a springform pan, an electric mixer, or any other specialized equipment. All you truly need is a reliable blender to effortlessly create the smooth and silky filling. If you choose to make your pie crust from scratch, a standard 9-inch pie plate will be necessary. Otherwise, a pre-made crust already comes in its own disposable pan, making cleanup even simpler.

Can I Freeze This Pie?

Absolutely! This no-bake chocolate pie freezes beautifully. Once the pie is fully set after its initial chilling, you can cover it tightly with plastic wrap and then aluminum foil to prevent freezer burn. It can be stored in the freezer for up to one month. When you’re ready to enjoy, simply transfer it to the refrigerator to thaw for several hours, or overnight, before slicing and serving. This makes it an excellent option for meal prepping desserts or having a special treat on hand for unexpected guests.

This easy No Bake Chocolate Pie requires just 5 minutes of prep work, is made in a blender and is vegan, too! Made with coconut cream, melted chocolate and a little almond butter, it’s SO creamy, chocolate-y and delicious!

Ingredients

  • 1 pie crust, homemade or store-bought (graham cracker recommended)
  • 2/3 cup coconut cream, cream only, from 1 can (chilled overnight)
  • 1/3 cup cane sugar
  • 1/4 cup almond butter (or cashew butter)
  • 1/4 cup plant-based milk of choice
  • 1/4 cup cornstarch (or arrowroot powder)
  • 1/2 cup dairy-free chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Add the coconut cream, sugar, almond butter, plant-based milk, and cornstarch to a blender and set aside.
  2. Next, melt the chocolate chips and coconut oil together in a small saucepan over low heat, whisking frequently until the chocolate has completely melted and is smooth. Pour the melted chocolate into the blender with the other ingredients.
  3. Blend the mixture for at least 30 seconds or until it’s perfectly smooth and creamy. You may need to scrape down the sides of the blender once or twice to ensure no lumps remain.
  4. Pour the chocolate mixture into the prepared pie crust, using a spatula to gently smooth out the top for an even finish. Optionally, sprinkle the pie with extra chopped chocolate for garnish.
  5. Place the pie in the refrigerator to chill for anywhere from 4 to 24 hours. For the best, firmest set, an overnight chill is recommended.
  6. Remove the pie from the refrigerator at least 10 minutes before serving. This allows it to soften slightly, making it easier to slice cleanly. Slice and enjoy your delicious no-bake pie!
