Instructions 

  • Preheat oven to 400°F (200°C).
  • Slice the top off the head of garlic, exposing the cloves. Drizzle the garlic with olive oil, wrap it securely in foil, and place the foil packet on a baking sheet. Roast in the oven for 30 minutes until soft and fragrant.
  • Meanwhile, drain and thoroughly rinse the canned chickpeas. Transfer the chickpeas to a nonstick baking sheet or clean kitchen towel. Gently rub the chickpeas to remove their skins, either individually or by rolling them back and forth. Discard the skins. Place the peeled chickpeas into a food processor.
  • Once the roasted garlic has cooled slightly, squeeze the softened cloves from their skins and add them to the food processor with the chickpeas (approx. 8-10 cloves), along with the salt and pepper. Pulse for about 30 seconds to start breaking down the chickpeas. With the food processor running, slowly add the lemon juice and melted butter through the top opening. Continue to blend until the mixture is completely smooth and creamy, stopping to scrape down the sides as needed.
