  4. In a large mixing bowl, whisk together the 16 eggs, ½ tsp salt, and ¼ tsp black pepper.
  5. In a small blender, combine the 1 cup cottage cheese and ½ cup milk. Blend for about 20 seconds until the mixture is completely smooth and creamy.
  6. Pour the smooth cottage cheese mixture into the bowl with the eggs. Whisk vigorously for 1-2 minutes until the egg mixture is well combined, light, and frothy. Pour this entire mixture over all the layers in the crockpot. Finally, sprinkle all 2 cups of shredded cheddar cheese evenly over the top.
  7. Cover the crockpot with its lid. Cook the casserole on the LOW heat setting for 6-7 hours, or on the HIGH heat setting for 4 hours, until the eggs are completely set throughout the center and the edges are lightly golden.
  8. Once cooked, remove the lid and let the casserole rest for a few minutes. Slice the casserole into 8 pieces. Garnish with chopped chives (if desired) and serve immediately for a delicious, fluffy breakfast!

Notes

You CAN cook this casserole overnight on low heat. Be aware that cooking for the full 7 hours on low may result in a slightly more browned and crispier top and edges. Adjust cooking time based on your slow cooker and desired texture.
